As
for Japanese sushi or English beer, Chinese fortune cookies
are found in every city of the world. The fortune cookies available
in Canada made from the traditional recipe and are among the
best in the world.
Ingredients:
1/4
cup all-purpose flour 1 tablespoon cornstarch
1/4
cup sugar
2
eggs whites
1/4
cup corn syrup 1 tablespoon orange blossom water
1
teaspoon finely grated orange zest
12 to 16 personalized messages!
Mix the dry ingredients carefully, add oil, egg whites and corn
syrup, mix again
Add the orange blossom water and the grated orange zest
Make
only 2 or 3 cookies at a time by extending little balls of dough
on a well-greased cookie sheet, 3 inches away from the rim.
Using the back of a spoon, shape each ball into discs about
4 inches in diameter, well apart from each other.
Cook
in the oven at 325 F for 10 to 12 minutes until the dough turns
a beautiful pale brown color.
While
the cookies are still warm, quickly picke them up with a large
spatula, place a message in the middle, fold them in half without
crushing them; then fold them again into the shape of a half-moon.Pressing
the cookie on the edge of a bowl will help give it this shape.
Cool at room temperature, with the points facing down.
If,
during this preparation, a cookie disc becomes too breakable,
you can resoften it by putting it back in the oven for 20 seconds.
The
manual preparation is rather delicate; do not be surprised if
you obtain strange shapes on your first try.
